Recently my soon to be 14 years old (as in 6 days!!!) daughter has expressed some interest in blogging. So, how do you jump back into a blog in the middle of a pandemic?? How about a recipe for Breadmachine Sourdough bread? While we were in self-isolation and it was impossible to get a Walmart grocery order pick-up schedule I started making bread. My 20+-year-old bread machine was dusted off, my precious jar of yeast dug out of the freezer and I got to work. Within minutes my bread machine was squeaking like a hamster wheel, leaving the kids to ask what that awful sound was and my husband thinking the smoke alarm was chirping in need of a new battery. A quick search on the internet and no luck finding a new breadmaker for under $300 left me more than happy with my old, squeaky machine!! I also soon discovered that yeast was hard to find! It took a few weeks, but I was finally able to purchase some yeast on Amazon.<br />

My user manual for my bread machine has a recipe for "quick" sourdough bread. Instead of using a sourdough starter, it calls for plain yogurt and a little lemon juice. The kids love sourdough bread! I have been recently gifted a starter for Amish Friendship Bread and have been using it in my recipe. Seriously, it makes to best bread!!<br />

The quickest way to make several cards is assembly line fashion. I needed 5 cards and honestly it would have only taken a couple of hours but life happened and I had to spread my cardmaking out over a couple of days. <br />
I dug out an old (actually ancient!!) card kit, a cute Stamp set (<a href="https://shop.pennyblackinc.com/p/jumbo-love" target="_blank">Penny Black's Jumbo Love</a>) and my Prismacolor pencils and got to work. I found it easier to work backwards, starting with my card base, then a layer of cardstock, patterned paper etc to get the proper measurements.<br />

Actually, busy is a huge understatement! But, some how in all of the busyness I recently took a Saturday and spent time in the studio. I had joined a tag swap with some friends and needed to get them done before the mailing deadline. I can not even begin to tell you how good it felt to get my fingers inky again!! <br />So, there were 5 of us in the swap and we made 5 tags for each lady. Once the sun was up and the kids were getting ready for school the feels like temperature read 43*! We had turned the furnace before heading to bed last night so in the night I was awakened to the smell of the furnace warming up for the first time of the season. Knowing that cooler weather was rolling in I wanted to geet my latest DIY project finished. We like to use a blanket in the evenings, we can have up to three blankets in use at one time. I have never had our blankets organized but really wanted a ladder to hang them on when not in use. <br />
Hubby cut the lumber and assembled my ladder and I gave it a coat of dark Walnut stain.<br />

I wanted the rungs of my ladder attached on top of the side rails, that looks more rustic and reminds me of old ladders going up to the hay loft in old barns. I love the imperfect finish of the deep, dark stain. Natural Oak or Early Americana are my usual go to wood finishs but I am loving the Dark Walnut stain on this piece!<br />

We have been using Zaycon for about 5 years now, our first order hubby actually drove to Montana to pick up! We have since bought from them several times, and have tried several different meats. We have been well pleased with everything we have bought from them! The chicken thighs are something we have bought a couple of times before, this was our first time buying the Italian sausage. The chicken thighs were 1.99/lb and Italian Sausage was 2.99/lb which are excellent prices for our area, but they sent a coupon code to myemail which saved us over $21!! <br /> If you are not familiar with Zaycon Fresh they are a company that delivers bulk meat (chicken, pork, ground beef, steaks, fish, shrimp lobster...) to your area. You order online and the day of pick up you go to your pickup loacation pull up beside the big truck and they load your order and send you on your way. <br />Getting back to the Italian sausages- I had recently seen some Sheetpan dinners pop up on my Pinterest feed. I saw several for chicken and veggies but I knew the sausages would work too. Usually when I made Italian sausages I make them like we had them at our county fair back in Ohio, on a bun with cooked onions and green peppers and tomato sauce. This time I wanted to change it up a bit. I surprised hubby when he came home expecting sausage sandwiches (he had even bought the buns LOL) and instead had a lower carb dinner ready for him. <br /> I lined a large cookie sheet with foil and prepped my vegetables. I peeled and diced 2 sweet potatoes, cored and seeded 2 green peppers and sliced those and a large sweet onion into strips. The sweet potato was placed on my pan first, then the peppers and onions and finally the sausages. I gave everything a light drizzle of Olive oil and sprinkled the veggies with salt and pepper, and added garlic powder to the pepper and onions. Gave things a light toss and put in a 400* oven. At 20 minutes I turned the sausages over and gave the veggies a toss then baked for another 20 minutes, my veggies were tender and the sausages were cooked through. After I pulled the pan from the over I added a little cinnamon to the sweet potatoes. Dinner was a huge hit, I ended up with only about 2 tablespoons of sweet potato left over!<br />

I love the start of a new month! I get to change out my door hangers! I know, I am silly, but it is fun! For March I chose a 4 leaf clover for good luck. This was my first time painting a chevron patteren. I decided to use a fancy border and add a huge intial. I added a jute rope for hanging and called it done. I am loving the green in the midst of all the white we have every where, it reminds me that spring will come.....eventually!! Maybe. I had some broccoli I needed to use and the taste for some broccoli cheese soup. Since it takes less than 30 minutes from prep to bowl in the Instant Pot Broccoli Cheese soup is quick enough to make fresh for hubby's lunch. In August my husband changed positions and locations at work. He did have a 40 minute drive and now it is less than 3! For the first time ever he lives close enough that he can come home for lunch. We have had sick kiddos for the past week so today I wanted to make him something extra special for lunch.<br />

We live 30 minutes from town so any day we need to head to town causes a struggle for meals. We are currently having lots of appointments in town, a good excuse to use the Crockpot! This week I tried a new recipe, Slow Cooker Chicken Tortilla Soup. Chicken Tortilla soup is very popular in our area, but I have never eaten it! My husband and daughter both like it, but I didn't even realize the one they like is cheesy and I made a non-cheesy one. Hubby said the new recipe is now his favorite!! Oldest son is now a fan and I thought it was really good! The jury is still out on oldest daughter! I will say I am not a fan of spicy foods but with the sour cream this soup was not too spicy at all!!<br />
With temperatures in the single digits this week, it was the perfect time to try a new, easy recipe for some spicy soup!!<br />
<br />
Slow Cooker Chicken Tortilla Soup<br />
<br />
2 lg boneless, skinless chicken breasts<br />
1 packet of Fajita seasoning<br />
1 med. onion, chopped<br />
2 cans Rotel tomatoes with green chilies<br />
1 can Black beans, rinsed and drained<br />
1 cup frozen corn<br />
1 bell pepper, your color choice (I used green)<br />
4 cups chicken broth<br />
2 cloves garlic, minced<br />
1 bay leaf<br />
Tortilla strips or chips, cheese, sour cream, avocado-for topping<br />
<br />
Add all but your toppings to slow cooker and mix. Cook on low for 6 hours, then shred the chicken breasts and cook for an additional 20 minutes.<br />
Serve with your favorite toppings.<br />
Leftovers are very good!!<br />

I am slowly but surly painting door hangers to have a couple for each month. I began painting these two last October and finally finished them this October!!<br />
The ground has been covered with snow since just after Halloween and I really struggled hanging my November hangers and not skipping straight ahead to Christmas! But, Thanksgiving is my favorite holiday and fall is my favorite season and I am not quite ready to let them go just yet!<br />

For my hanger I started with a very large pumpkin cutout but I wanted more than one pumpkin. So, I used various shades of orange to add the smaller pumpkins, it turned out so cute!! And because I now have a little experience painting these hangers I did not hesitate one bit free-handing my lettering. I added a leather hanger and a hand tied bow before hanging it on my door. All of the kids love this one, they like seeing their names!<br />

I am so glad that old pick up trucks are "in" now!! My dad had a thing for old trucks and they remind me of him. I am so happy to have this one!! I love my little truck!! I found her first on Youtube and then on Facebook. Last month was her first online paint party and I had to jump at the chance to paint with such a talented lady!! <br />Tamara cut the door hangers and sent them to the party participants. So, my second door hanger for September is a huge acorn! My painting is very basic on this piece but it works. I transferred the lettering using carbon paper before painting it. The most time consuming element was finding the right font, I finally found a free one I liked and downloaded it. My acorn measures 18"x24", I like the larger size for my doors. Working with yellow paint on wood can be a little tricky. I have learned from another painter to use white paint as a base layer. The picture was after the white and yellow layers were done and I had started adding the orange layer.<br />

I used water to thin down the orange and red paints which allowed me to blend them. A new technique for me.I then finished by adding the details, the "veins" of the leaf, the light yellow around the outer edge pulls the whole shape together, and then I used water again to thin down some brown paint before flicking it all over my leaf. I added a jute hanger and called it done!<br />
Living on the prairie we don't have many trees, we also have some pretty wicked winds quite often so we really do not get to enjoy the beautiful leaves like we did back east. Now we have at least one beautiful leaf at our place! <br />Thanks for stopping by!<br />

I have been making these cookies for years, and from the beginning folks have always tried to figure out the "secret ingredient." <br /> I made these cookies for the first time while I was cleaning offices as a third job. I took the cookies to the guys working in the factory one night and then every night they would meet me at the door wanting cookies. <br />We joke that HB asked me to marry him because of my cookies and my gravy! I have extra stuff I need to store that I don't have room for in my kitchen. I had been using the small linen closet, but it is small, on the opposite end of the house (so not easy to access while cooking) and the shelves are spaced very far apart. I cleared out the closet, took some measurements and headed to Home Depot! I decided to go easy and bought the Closet Maid shelving system. The top shelf (not pictured) is the full length of the closet 68". It is now the new home to my empty canning jars.</div>

I was able to store my bread maker here, moved in my Kitchenaid Mixer from the kitchen counter (it's under that pretty cover) and my Instant Pot now has a home in there too!! <br />Hubby installed a hook to hang that mini-step ladder. (Handy for reaching those canning jars!) I had the Sterlite drawers in another area, but they will work here to store potatoes, paper towels and other items.</div>

I ran into Home Depot to grab something for another project and saw those Pantry Packet holders. I picked up 2, I currently have rice mixes in them but I will move them and use these for smaller packets and drink mix packets.<br />
I love that now everything is handy and the new pantry works for our family. It should be easier for the kids to put groceries away and I can quickly see what needs to be added to my grocery list! <br />

Put a few marbles in the bottom pan, then you put the second pan with your spices on top of the marbles. Spinning the top pan is much easier than sorting through the basket that held my most used spices. I am going to pick up more marbles and pans to make more spinners for my spice cupboard. Who knows, I may even give them a face lift with a coat of paint! <br />

How cute is this hat? When I bought the unfinished wood shape I couldn't make up my mind if I wanted a leprachaun hat or a Patriotic Uncle Sam hat, why pick when you can have both!! LOL I painted my hat with green acrylic paint, added a black band and golden yellow "buckle" drew a shamrock and added some vinyl lettering. Project St. Patrick's Day was done. Once I take it off of my door next month I will paint the back side red, white and blue for the 4th of July. Two holiday hangers one wood cutout.<br />
My door faces south and has a glass storm door, that has been causing my a ton of problems with my vinyl lettering staying on my wood. I have tried using a thicker font, I used a hot hair dryer to stick the vinyl good before hanging it and still have problems with the lettering coming off. If you have any ideas or tips please share them. <br />

This is what I started with, Two owls sitting on a branch. I immediately thought of hubby and me when I saw this and knew that I wanted to add our initials to the heart. The wood is different than the other hangers I have painted and soaked up the paint quite a bit. I just needed to use 2 coats of some of the colors. This is what I ended up with-<br />

Yesterday was one of those days that I knew ahead of time was going to be crazy. We seem to have a lot of those lately! I had to appointments in town that overlapped, then I needed milk before heading home added to the hour travel time and once home we needed to re-package the 80 pounds of ground beef we had picked up. I am thankful that I had planned ahead for dinner!! Not only did I use my meal plan for the month but I used my Instant Pot to cook frozen chicken in only 16 minutes!! After dropping the 3 older kiddos off at school I threw the chicken in the Instant Pot, and then did a couple of chores around the house while the chicken cooked. After letting the pot naturally release pressure I mixed my chicken with the other ingredients, rolled in tortillas cover and put in the refrigerator until dinner time. After finishing up the ground beef and getting it into the freezer it was only 30 minutes until we were eating a hot meal! I had made some Mexican rice the day before so I just reheated it to go with my enchiladas. Hunter asked if there were more enchiladas after the first bite! He then said he loved enchiladas more than sushi, and sushi more than pizza!! That is saying a lot!! :-) And he asked if we could have them everyday!! (Maybe I should mention that this hillbilly girl never made enchiladas before!! LOL) I am sure they will find their way back in my monthly meal plan!!</div>

Easy Instant Pot Enchiladas<br /><br />Put 3-4 chicken breasts, thighs or even ground beef</div>

1cup broth (chicken, beef or veggie) or water<br />1 small Onion, sliced thin</div>

salt, pepper, and minced garlic</div>
Into your Instant Pot, put the lid on, turn valve to "Sealing" select Manual for 8 minutes, 16 if frozen. After the timer beeps let pot sit for about 10 minutes before releasing the remaining pressure. Remove chicken from the pot and shred it in a large bowl, <br /><br />

Add 1/2 c red or green enchilada sauce, </div>

1/2 c sour cream,</div>

about 1 cup of your favorite Mexican cheese</div>

and mix well. Warm 8 (I used 12) tortillas until they are pliable. Spoon 2 TBSP chicken mixture to middle of tortillas and roll like a cigar. Place rolled tortillas in a 9x13 baking dish that has 1/2 c enchilada sauce placed in the bottom. After all of your enchiladas are in the dish cover with remaining sauce, sprinkle with Mexican cheese (I used a lot for my boys, I think they are part mouse as much as they like cheese!! The girls on the other hand just had a little sprinkle of cheese! LOL) <br />Cover the dish with foil and bake at 350* for 15-20 minutes, remove foil and bake for another 5-10 minutes. (If refrigerated bake for 30 minutes or until heated through before removing the foil.)</div>

Right after we celebrated Thanksgiving we got our first snow storm, and then another and another! Between the 3 storms we have piled up a considerable amount of snow, may 50". It is hard to measure because of the wind! And then there is the cold, windchill was -40* this morning!! I love snow, but even I have had enough now that Christmas is over! The kids are not able to get out and play very often, and even if they could there is not much to do outside! The snow does not pack well so snowmen are few and far between. The swing set is buried, only the top couple of inches of the slide is visible and the swings are hidden in the snow. <br />Hubby is hoping to hit the ice and do a little fishing this weekend. We will see how that goes, if the weather will let him. <br />
I haven't accomplished much of anything lately. I was hoping once the kids went back to school after the new year I would be able to check a bunch of stuff off of my ever-growing to do list. I am starting to think I packed my motivation in one of the Christmas decoration boxes. LOL I would much rather be working in my garden but instead I have this.......<br />

After a little research I learned that the Instant Pot is an electric pressure cooker. AND I soon found out I could cook quick meals using frozen food!! Remembering to thaw something for dinner is my biggest problem, well, that and being very busy! <br /> It didn't take long for me to ask hubby for one for Christmas. Due to a "Snow storm" dumping nearly 2 feet of snow followed by a Blizzard dumping 10" more our mail has been delayed quite a bit and my Instant Pot arrived on December 27. I did the water test and then Made the easiest to peel boiled eggs ever.<br />

And then the neighbor's cat and 3 big hail storms took a toll on my garden! This has been the worst year ever for growing fresh veggies for our family! I barely raised enough vegetables for one person, let alone enough for our family of 6! But, I have already taken steps to improve my harvest next year!<br />One of my homestead projects this year was to make a veggie hod to use when I harvested dirty things like potatoes, carrots and radishes. The openness allows you to give things a quick rinse with the garden hose before taking them in the house.<br />

I had found the link to the DIY on Pinterest (<a href="http://statebystategardening.com/state.php/mo/newsletter-stories/build_a_garden_hod/" target="_blank">HERE</a>) and really wanted to make one. I ended up needing a lot of help from my sweet hubby to get it constructed, not because the design was difficult but because I lack power tool confidence! The hod is plenty big enough to hold lots of goodies and is very sturdy. I could take my basket along to the farmer's market instead of using my fabric bag that leads to squished bread. LOL<br />
So, bring on the garden fresh veggies next year, I am ready!!<br />

He was born and raised as a Buckeye, graduated from The Ohio State University and was on staff there for 15 years!! To say he gets excited watching Buckeye football would be a HUGE understatement!! I was going to take a before picture, but jumped the gun and started painting and then remembered the picture! :-) By the time hubby got home from work I had the entire football painted reddish brown and had drawn circles all over it. After all the kiddos were tucked into bed I painted all of my circles gray- that is when hubby took one look, rolled his eyes and said, "You must have a plan." Yes, yes I did have a plan.... I wanted polka dots, and some vinyl lettering, a bow and a ribbon hanger- if it is going on the door it is going to be "cute!" <br />

And now my "plan" is hanging on our front door, which left the back door naked! And seriously, the Buckeyes' helmets have got to be one of the easiest helmets to paint, so that was my next project.<br />

Ooops, I didn't learn from my past mistake and didn't get a clean before picture!<br />
I had hubby mark my the face guard and strips for me. I was surprised how quickly this one was to finish. The sooner it is finished, the sooner it is hanging one the door, the sooner I can move on to another project! Win, win, win!<br />
